Caramel Apple Pork Chops

Sorry everyone for the lack of posts lately, but my computer was in the shop. My hard drive was corrupt, and I ended up having to wipe it. Even worse, I don't have everything backed up, and my back up for the rest is missing. : ( So to say the least, every time I get on my computer a bout of depression comes over me whenever it's apparent that I'm missing some of my stuff. Hence, the lack of posts.

I was able to cook some food, despite this technology caused depression; some delicious food! I made Caramel Apple Pork Chops, as I was trying to get rid of some pork chops we had in the freezer. This recipe was quite delicious, but the pork chops were may have been in the freezer too long, they were kind of tough. But I found myself spooning up the sauce and apples down to the last drop. I served these with some mashed potatoes.
Here's the recipe adapted from All Recipes.

Ingredients:
4 (¾ inch) Thick Pork Chops
1 tsp Vegetable Oil
1/4 cup Brown Sugar
Salt And Pepper To Taste
 tsp Ground Cinnamon
 tsp Ground Nutmeg
2 Tbsp Unsalted Butter
2 Tart Apples - Peeledcored and sliced
¼ cup Orange Juice


Directions:
1. Preheat oven to 350 degrees F.

2. Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, on each side, just until browned. Place in a 9x13 pan.

3. In a small bowl, combine brown sugar, orange juice, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cook until apples are just tender. Pour mixture over pork chops.

4. Place pan in oven and cook until the pork reaches 160-170 degrees F. Serve with mashed potatoes.
